Apricot mango or raspberry works equally well here.

SERVE 1

PREPATION TIME: 5 minutes

-1 white peach

-champagne, chilled

Peel the peach and blitiz in a food processor to make a purrèe.

Refrigerate until you’re ready to use.

For a few centimeters into the bottom of a champagne glass and top up with chilled champagne. Stir serve

CHAMPAGNE COCKTAIL

Adding a twist to a glass of fizz feels ultimately decadent,

SERVES: 1

PREPATION TIME: 1 minutes

-1 white sugar cube

-Angostura bitters

-Cognac

-Champagne,chilled

Put the sugar cube in the bottom of a champagne flute, add a few drops of bitters, a couple of dashes of cognac and top up with chiled champagne

BICICLETTA

A clever and refreshing drink. Use a cheapish Italian white- the Campari helps the wine along. It’s named after Italian gentleman food of the tipple, who weave their way home on their bicycles after drinking.

SERVE 1

PREPATION TIME: 1 minutes

-25 ml campari

-white  wine

For a splash of Campari into a wine glass containing serveral lumps of ice and top up with white wine you want it to be gentle orange-pink colour

EGGNOG

This is as filling as a dessert-and twice as indulgent.

SERVE: 6-8

PREPATION TIME: 03 minutes

COOKING TIME:  05 minutes

Ingredients

-1 litre milk

-06 eggs

-50 g sugar

-1 tsp vanilla essence

-200 ml brandy

-1 pinch nutmeg

-Orange zest, to serve

1- put the milk, eggs, sugar, and vanilla essence into a pan over a low heat and stir constantly as you bring it to a very low simmer. It should be just thick enough to coat the back of the spoon, but not quite boiling.

2- divide the brandy between the glasses and for the eggnog over it , dusting the glqss top with a little nutmeg and orange zest. Serve warm
